Root Medley

(Designed for the Ultimate Reset program so makes 1 serving; you can change the portion sizes in order to cook for your family)
Ingredients:

¼ medium yam, cut into 1-inch chunks
½ medium carrot, cut into 1-inch chunks
½ medium beet, cut into 1-inch chunks
¼ medium onion, peeled, cut into large wedges
2 tsp. extra-virgin
Himalayan salt (to taste, if desired)
Directions
Preheat oven to 400 degrees F. Combine yam, carrot, beet, onion, oil, and salt (if desired); mix well. Arrange vegetables in a single layer on a baking sheet. Bake for 40 – 50 minutes, or until tender, turning once or twice.
My husband and I were AMAZED by this recipe. We do not like beets at all, but we did the Ultimate Reset together and went ahead and tried this recipe. We were floored at how yummy it was. In fact all of my children eat it as well and LOVE it! Now I am including in my 21 Day Challenge group menu as well. It is so delicious. I hope you enjoy it too.
