Poached Tilapia with Veggies


**I always make for my entire family so these are portioned for families and for left overs for lunch the next day.

Ingredients:

  • 6-7 raw tilapia

  • 1 tsp Himalayan salt

  • 1 tsp black pepper

  • Mediterranean seasoning

  • 2 tsp olive oil (or coconut oil)

  • 1 cup sliced carrots

  • 1 cup sliced red onion

  • 8-9 lrg asparagus cut into small pieces

  • 3 cloves garlic, chopped

  • water

  • 1 tsp fresh dill (if desired)

  • lemon (if desired)

Directions:

Preheat oven to 425 degrees.

Season tilapia with salt, pepper, and Mediterranean seasoning.

Place tilapia in large oven-safe platter. Just slightly cover fish with water.

Put in oven for approximately 12-15 minutes, just until fish is done.

Heat oven with nonstick skillet over medium-high heat.

Add olive oil (or we love to use coconut oil instead for extra flavoring) - Add carrots and onion; cook, stirring frequently, for 2-3 minutes.

Add asparagus and garlic; cook, stirring frequently, 2-3 minutes, until veggies are only slightly crisp.

Place veggies on platter. Keep warm.

When both the fish and veggies are done, place fish on plate and top add veggies. Squeeze lemon and dill if desired.
