Mexican Shrimp


Ingredients:

  • 2 lb. frozen large shrimp, peeled and tails removed

  • 21 Day Fix Southwest seasoning

  • 2 tsp coconut oil

  • cilantro

  • lime (if desired)

Directions:

Thaw and dry shrimp before placing in saucepan (I like to use our wok). Put coconut oil in pan on medium heat, add shrimp. Cook thoroughly and then add seasoning and mix well. (I usually put about 2-3 tsp or more) I am generous with the seasoning. Remove from pan and place in another bowl. Add chopped cilantro if desired.. It is ALWAYS desired in my family... the more cilantro, the better :) Serve with lime on the side... squeeze as much on it as you like. Yummy!

Serve with rice and veggies.... we like to have asparagus with our seafood.
