Mexican Pizza Tostadas


Mexican Pizza Toastadas

*Containers* 1- blue, 1- Green, 1- Red, 1-yellow

* I double the recipe and then freeze the rest for next week. Don’t forget if you are on my 21 Day Fix plan, separate your lunch for tomorrow.

You either prepare to succeed, or prepare to fail!

Ingredients:

  • 1 lb. Lean Group Turkey Meat

  • 3/4 cup Sweet Pepper (chopped)

  • 1/2 cup Onion (chopped)

  • 6 Garlic Cloves (minced)

  • 1/2 cup Tomato Sauce

  • 1/2 cup Shoepeg Corn

  • 2 Tbsp Taco Seasoning

  • 8 Corn Tortillas

  • Optional: Cheese

Directions:

  • 1 In a large skillet, brown ground turkey till fully cooked. Remove from pan and drain fat. Cook chopped sweet pepper, onion, and garlic over medium heat until cooked thoroughly. Add meat to vegetable and mix.

  • 2 Stir in tomato sauce, corn, and taco seasoning. Cook until heated through, stirring occasionally.

  • 3 Toast corn tortillas on backing pan at 400 degree F for about 4 minutes each side. Don’t spay anything on them; that creates a soggy tostada. Remove and top with meat, * I add jalapenos to mine J. Serve with Fresh Salsa & Guacamole (careful with the guacamole). Top with cheese (optional)- one blue ONLY (I never seem to use it all).
