Healthy Chicken Noodle Soup


Ingredients:


4 Chicken breasts-cooked and shredded

8 cups low sodium chicken broth

2 tsp extra virgin olive oil

1 1/2 cups chopped celery

1 and 1/2 cups chopped carrots

1 cup chopped onion

5 tsp minced garlic

2 tsp himalayan salt

2 tsp black pepper

1 bag whole grain egg noodles

Directions:

Place olive oil in saucepan over medium heat. Place chopped celery, carrots, and onion in saucepan. Cook till soft, about 6-7 minutes. In large saucepan, add chicken broth, veggies, garlic, salt, and pepper. Simmer for about 15 minutes. Add cooked chicken, cook on low heat for about 30 minutes to help the seasoning and flavors. Bring to a boil, add noodles and cook for about 8-10 minutes till noodles are fully cooked.
