Healthy Butternut Squash Beef Stew


This is a doubled serving for my family of 5... and we want leftovers for lunch tomorrow.

Ingredients:

  • 3 1/2 lbs raw lean beef stew meat, boneless, cut into 2 inch cubes

  • 1 medium onion, chopped

  • 1 green bell pepper, chopped

  • 1 red bell pepper, chopped

  • 6 cloves of garlic, crushed

  • 2 medium tomatoes, chopped or 1 lrg can of petite diced tomatoes

  • 4 cups low sodium organic beef broth

  • 2 bay leaf

  • 2 tsp. sea salt

  • 2 tsp. ground black pepper

  • 1 medium cubed butternut squash

  • 1/2 cup chopped fresh flat leaf parsley

  • Directions:

  • Put all ingredients in crockpot EXCEPT the squash. Cook on low for 6 hours, then cut the squash up in small cubes and add and mix in the crockpot. Cook for two more hours.

  • 21 Day Fix serving: 1 and 1/2 cup serving = 1 Red, 1 Yellow, 1 Green
