Coconut (meat) Stir Fry


So this is a take off of one of my favorite meals from our Beachbody Ultimate Reset meals. You pick whatever veggies you want.

Here I have carrots, squash, sweet potatoes, zucchini, and broccoli.



Choose whatever meat you want, low on fat! Cook the meat in about a tbsp of organic extra virgin olive oil till done, remove from heat.

Add about 2 tsp organic virgin coconut oil to stir-fry pan and 1tsp sesame oil.

Add veggies, cover, and cook until tender.

Add meat to veggies and stir to let me absorb the coconut flavoring.

Remove and enjoy. You can add a little salt to bring out flavor, but remember the point of this dish is a yummy HEALTHY choice.
