21 Day Fix Cheddar Broccoli Stuffed Chicken


This is a great recipe for the 21 Day Fix challenge. It is more complex than what I normally make, so I know my family is always happy; I am perfectly happy eating very simple. This may have more to it but do NOT be afraid... it is not difficult. You can also substitute the 21 Day Fix All Purpose Seasoning in place of the ones listed below. Enjoy.

INGREDIENTS

1 Chicken Breast (depending on the size of the chicken it could be 1 or 2 red containers)

Cheddar Cheese (1 blue)

Frozen Broccoli (1 green)

Salt

Pepper

Onion Powder

Garlic Powder

Cayenne Pepper

Paprika

DIRECTIONS

Preheat your over to 350 F. Chop broccoli and set aside. Butterfly the chicken breast in half. Pound the chicken with a mallet to get it thinner and the same width all over for even cooking. Next, put all the seasonings I wanted. Then add a layer of cheese (if you are doing 21 Day Fix, save some for the top). Then add layer of broccoli; make sure you don’t put too much or else you won’t be able to roll it up! Start on one side and roll the chicken breast in, and tuck in any sides that may be hanging out. Once it’s rolled up, turn it upside down so the part where the chicken ended won’t open up when baking. Spray the bottom of your pan with olive oil and on the top of the chick. Put more seasoning on the top.

Place chicken in the oven for 25-35 minutes. Once the chicken is cooked, move them to a broil safe pan, add left over cheese, and broil for 2-5 minutes until the cheese on top is nice and bubbly! Enjoy.
